Yum! Pumpkin Cookies
A Note from Amanda:
One of my ultimate favorite things about fall are pumpkin cookies. This recipe is a family recipe from my mom (not sure on the origin). Be warned these disappear very fast! Doubling the recipe probably isn’t enough!
Pumpkin Cookies
1 cup sugar
1 cup canned pumpkin
1/2 cup shortening or butter
2 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
Mix pumpkin, sugar and butter. Add remaining ingredients. Bake at 350° for 8-10 minutes. Immediately remove from the pan. Frost with light brown glaze (recipe below). Enjoy!
Light Brown Glaze
1/4 cup butter
2 cup powdered sugar
1 tsp vanilla
1-2 tsp milk
Heat butter in saucepan over medium to high heat until light brown. Stir in remaining ingredients until smooth.
